German[edit]

Etymology[edit]

From Middle High German agraz, perhaps influenced by Italian agresto. Ultimately probably derived from Latin acer (sour). Alternatively from Latin agrestis (coarse).

Pronunciation[edit]

Noun[edit]

Agrest m (strong, genitive Agrestes or Agrests, no plural)

  1. (historical medicine) verjuice
    Synonym: (especially cooking) Verjus

Usage notes[edit]

  • Both Agrest and Verjus are rare as verjuice is unusual in German cuisine.
