Compound incorrect?[edit]
The page says Etymology: Compound of blauw + schimmelkaas. I might be a little pedantic here, because schimmelkaas as a description for molded cheese does exist, but I think the compound in this case should be blauwschimmel + kaas (so blue mold + cheese).
