Per the DWDS ‘tis not related to wirsch:

unwirsch Adj. ‘unwillig, mürrisch, unfreundlich’ (19. Jh.), zuvor ‘zornig, barsch, grob’, mhd. ‘verächtlich, schmählich, häßlich, zornig’. Frühnhd. unwirdsch, unwirsch ist durch Kürzung in unbetonter Silbe aus mhd. frühnhd. unwirdisch, mhd. auch unwirdesch, einer adjektivischen Bildung zu mhd. unwirde ‘Geringschätzung, Verachtung, Schmach, Unehre, Schande’, entstanden; vgl. mhd. wirde, wierde, (md.) werde (s. ↗Würde).

& at the entrance for wirsch it says:

eine etymologische Beziehung zu unwirsch besteht nicht

@J3133: I know, but you could have seen that the IP used the wrong template and did not even question the word’s existence, and maybe you could have even seen the word being all around used by a search (or if not, you see why it’s a bad idea to replace all language education with Esperanto). Possible misquote

The text contains the following quotation, which I have for now made invisible:

Mit gleichbleibend freundlichem Lächeln drückte sie einen extra großen Klacks der unerwünschten Beigabe auf seinem Teller, bevor sie sich in gut gespieltem Erschrecken eine Hand vor dem Mund schlug und ihn mit der anderen unwirsch weiterwinkte. ("With an unvaryingly friendly smile she squeezed an extra large blob of the unwanted condiment onto his plate before she slapped a hand in front of her mouth in well-feigned horror and beckoned him away gruffly with the other.") Bruno Steiger, Erhöhter Blauanteil, Nagel & Kimche, 2004, p. 74.

This text contains two grammatical errors of the same sort (wrong case agreement). It must be "auf seinen Teller" and "vor den Mund". Such a mistake would be very unusual to see -- twice -- in a printed text, and I strongly suspect that it is a misquote. If not, we would have to add "[sic]" after "seinem" and "dem".
