From French brasque, from Vulgar Latin *brasica, from Proto-West Germanic *brasa, from Proto-Germanic *brasō, from Proto-Indo-European *bʰres- (to burst, crack); Related to Proto-Germanic *brestaną. Or, from Proto-Indo-European *bʰrewh₁- (to seethe, boil).
