Etymology[edit]

French pigeage

Noun[edit]

pigeage (uncountable)

  1. The stamping down of grape skins that float to the surface during the fermentation process in winemaking.
    • 2011, Steve Hovington, The Grape Escape, page 142:
The pigeage was still hard work, especially after lunch, but it seemed to be getting slightly easier. Later, I spent an hour or so in the office researching temperature control fermentation.
