From ()やし (hiyashi, (れん)(よう)(けい) (ren'yōkei, stem or continuative form) of the verb ()やす (hiyasu, to chill)) + (ちゅう)() (Chūka, China, as in (ちゅう)()(りょう)() (Chūka ryōri, Chinese food)).
